April Showers bring May Flowers, but March Madness Brings IT ON!!!

About this time last year my sister, Stephanie, and I were bouncing around our Phoenix home singing to my mother about the beautiful weather that was about to come! (Back to the 80’s. back to Shorts! Back to Tanning and Cherry Cokes! Those were the Days!) As much as I love wearing cute sweaters, crunching through leaves, buying boots, and building snowman, I can not wait until I can pull out my shorts, find that pink bikini, and sip lemonade while driving with the windows down. March is the bittersweet overture to the Grand Summer Showdown. With the overly planned Spring Break, the crazy hype over March Madness, and the Need for Green on St. Patrick’s Day there is a lot to love in March and a lot to look forward to.


I don’t believe in a “Party of One” so for this Almost-Spring Season I will be finding any moment I can to break out of the house, score some extra points, and possibly have the best party and food ideas to start the season! It’s Back to the 80’s, Back to Shorts, Back to Glitter and Fancy Cups! These are the Days!

Hey! Show Me Your Party Spirit

Feathers, Glitter, and Beads! There is nothing wrong with that Statement, now add a little bit of Masked Mystery and we have the Festival of the Season! Of Course, I am talking about Mardi Gras! The one time of the year when we can pull out the Masks and Beads and run around town painting the town Purple, Green, and Gold all while dancing to amazing Jazz music.

Suggested Event Colors: Purple, Green, and Gold

Summary: As the weather is starting to warm up it is a great time to call all of your neighbors out of their warm homes and into the streets. Mardi Gras is known for many things, Great Food, Music, Dancing, Games, and, of course, Mardi Gras Beads. A Masquerade Mardi Gras Party works great for a Block Party, Church Party, or even a School Carnival. For this Example, we will be using a Block Party.

Everything Mardi Gras is known for will be present in the Block Party. Dinner will be a Barbeque featuring Chicken and Potluck for side dishes. Games will provided in form of Carnival Games, and Dancing will be brought to you by Modern Classical Jazz.

Invitations: Invitations for the Block Party should be sent out 1 and a half to 2 weeks before the event. It is best to Hand-Deliver these invitations. When it comes to Neighborhood parties, families like to meet the hosts personally before they attend, especially newer families. Take a day and work your way around the neighborhood ringing door bells and inviting families, this is also an easier way to get potluck volunteers.

Chicken on the Grill!

Print off your Write-Up on the White Cardstock, cut out the invitation, mat on Gold Cardstock and cut the invitations. Tape the Cardstock Invitation onto a tulle stick, on the other tulle stick tape a Mardi Gras Mask.

Using the Gold Mardi Gras Beads fill the Green Plastic Cup ¾ full. Then Place the two tulle sticks in the cup.


Table Set-Up: Depending on where the party is being held the way you place or tables or how you decorate your tables can be left up to the weather and venue limits. For this type of event Circle tables would be the best for socializing and they fit in a smaller space. Seats should not be assigned. Guests will be getting up and down from them as they are eating, playing games, and dancing.

Tablecloths should reflect the fun and excitement of Mardi Gras. Use alternating cloths for each table (Purple and Green) with a reflecting fun centerpiece. Place 6 chairs around the table.

Centerpiece: You want to keep the centerpiece small, just in case weather kicks up. Keep it simple with a square mirror laid flat, on top place 3 candles in a triad position. Take mask cut-outs (like the ones used for the invitations) and small silver nails and pin the masks into the candles, around the candles loop gold mardi gras beads.


Other Decorations: For light when it gets dark and for classy decoration while its light out use white paper lanterns (colored ones will look just as good). Another cheaper idea would be to use tiki torches around areas that children wont be running around.

Music: Mardi Gras is known for their Jazz Music and great tunes street goers can dance too. For your party, you have a choice of getting a live jazz band, getting a D.J, or making your own Playlist. A Live Band is great for Live Music and Dancing. Guests will enjoy having live entertainment. A D.J will do all of the music preparation for you. A Music Playlist is the hardest of the three, but it is the less expensive route.

Games: Mardi Gras is very similar to a carnival, the children in the group will love Carnival Games and the teens would love volunteering to help out with the games.

Bucket Toss: Line buckets 6 inches apart on a board. Line the players up 8 feet away from the board and have each player throw 3 bean bags, if they are successful and make it into the bucket a prize will be rewarded.

Balloon Darts: On a stiff board or a small flat-board of plywood pin different size, different color balloons full of water. Players will be lined up 10 feet away from the board with darts. When a balloon is popped a prize will be rewarded.

Can Knockdown: Stack 5 cans on a table 8 feet away from the players. Players will have 3 bean bags they can throw, when all cans are knocked down, player will be rewarded a prize.

Hula Hoops: Players will compete to see who can Hula Hoop the longest and win a prize.

Ring Toss: Put your old coke bottles to use. On a small piece of flat plywood glue 4 bottles equal distance apart. Players line up 6 feet away from the board with 3 rings that they can throw. When a ring falls around a bottle a prize will be rewarded.

Prizes: Prizes can range from Mardi Gras beads to Glow-in the Dark Frisbees (oriental trading) to candy. Oriental trading has great bundle prices and orders can be made online.

Dinner: With a Block Party Barbeque it is best to have the option of Hamburgers vs. Hot-dogs or, for this occasion, Chicken vs. Steak. Guests can bring their own meat or it can be supplied by the host family.

Bourbon Whiskey Barbeque Sauce
Makes:

½ Onion, Minced                                      4 Cloves Garlic, Minced
¾ cup Bourbon Whiskey                          ½ teaspoon Ground Black Pepper
½ teaspoon Salt                                        2 cups Ketchup
¼ cup Tomato Paste                                 1/3 cup Vinegar
2 tbsp Liquid Smoke Flavoring                  ¼ cup Worcestershire Sauce
½ cup Packed Brown Sugar                      1/3 teaspoon Hot Pepper Sauce

In a large skillet over medium heat, combine the Onion, Garlic, and Whiskey. Simmer for 10 minutes, or until Onion is translucent. Mix in the Ground Black Pepper, Salt, Ketchup, Tomato Paste, Vinegar, Liquid Smoke, Worcestershire Sauce, Brown Sugar, and Hot Pepper Sauce.

Bring to boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.


Along with the barbeque a great way to take a major load off the hosts shoulders would be to make the occasion a “Pot-luck” (Volunteers each bring a plate). This way there is plenty of food to go around and everyone’s different tastes are satisfied. Here are just some suggestions for dishes to bring to the table.

Southwestern Layered Bean Dip
Makes: 12 Servings

1 (16 oz) Can Non-Fat Refried Beans       1 (15 ounce) Can Black Beans, Rinsed
4 Scallions, Sliced                                     ½ cup Salsa
½ teaspoon Cumin                                    ½ teaspoon Chili Powder
¼ cup Pickled Jalapenos, Chopped           ½ cup Shredded Monterey Jack Cheese
1 ½ c Chopped Romaine Lettuce              1 Medium Tomato
1 Medium Avocado                                  ¼ cup Canned Sliced Olives
2 Container Sour Cream

Combine Refried Beans, Black Beans, Scallions, Salsa, Cumin, Chili Powder, and Jalapenos in a medium sized bowl. Transfer to a shallow 2-quart Microwave Safe Dish. Sprinkle with Cheese.

Microwave on High Heat until Cheese is melted and Beans are hot. 3-5 minutes.

Spread Sour Cream evenly over the Hot Bean Mixture, then scatter with Lettuce, Tomatoes, Avocado, and Olives.

Serve with Tortilla Chips.


Mardi Gras Pasta Salad
Serves: 6

1 Box Tri-Color Rotini Pasta              1 Small Red Onion
1 Small Green Pepper                        1 Large Carrot
1 Can Whole Corn                             1 Can Petite Diced Tomatoes, Drained
1 Bottle Italian Dressing

Cook Noodles according to the box directions for al dente and rinse with Cold Water/

Dice Onions, Peppers, and Carrots into small pieces. Drain Tomatoes and Corn Well.

Add all Veggies to the cooked Pasta Noodles.

Pour Dressing over top, using as much as you would like, to taste.

Refrigerate over night.

Cocktails: It is up to the host whether or not the need for an alcoholic beverage at the party. I would recommend a cooler placed away from the children surrounded by adults to watch filled with beer or whatever drinks you would like for personal enjoyment. For other Beverages giant drink coolers are the best to store and serve.

Virgin Hurricane

1 Splash Grenadine                            2 ounces Orange juice
4 ounces Pineapple Juice                    0.5 ounces Sugar Syrup

Mix Juices slowly with Sugar Syrup. Stir. Splash the Grenadine to turn the Mixture red. Serve chilled for best taste. Be careful with the Sugar Syrup, too much can turn your Hurricane into a Super Sweet Disaster.

Home-made Root Beer
Makes: 2 Liters

1 cup Table Sugar                                   1 tablespoon Root Beer Extract
¼ teaspoon Powdered Bakers Yeast       Cold Fresh Water
2 L Soda Pop Bottle

Funnel 1 level cup of Sugar, then add ¼ teaspoon of Powdered Bakers Yeast. Shake Bottle, then swirl the mixture to make the center of the mix concave.

Add 1 tablespoon Root Beer Extract. Fill the bottle half-way with Cold Tap Water. Rinse in the Extract which sticks to the Tablespoon. Swirl the bottle to mix and dissolve the Extract. Once it is well blended fill the bottle to the neck, cap, and seal. Invert repeatedly to dissolve more extract.

Store at Room Temperature for 3-4 days until Bottle feels hard to a forceful squeeze.

Refrigerate over night before serving.

Dessert: Along with potluck entrees, most families will easily volunteer for bringing dessert. Once again, the follow is just a suggestion.

Chocolate Covered Bananas
Makes: 8 Bananas

1½ cup Nuts                                     3 tablespoons Butter
4 Firm Bananas                                 ½ cups Semisweet Chocolate Morsels
8 Wooden Skewers

Measure Nuts into shallow pan and set aside.

Melt Butter and Chocolate Morsels together in small saucepan on low heat, stirring constantly until smooth. Pour Chocolate Mix into second shallow pan and set aside.

Peel Bananas and cut in half cross-side.

Immediately dip bananas in melted chocolate to coat evenly. Roll in nuts pressing nuts into chocolate to coat evenly. Place on wax paper lined tray.

Freeze firm for 2 hours.

Rice Krispies may be substituted instead of nuts.

“If You Are Not In Fashion, You are Nobody!”

    Every year women from around the world pack their bags with Designer Wool Coats, Fancy Scarves, Expensive Boots, and their Fashion Handbook for New York Spring Fashion Week. Fashion Week is known for its exciting Fashion Shows, its wide celebrity attendance, and, of course, the clothes!!! For many of us we just dream of the days when we can clear our work schedules, make enough food to feed the husband for a week, and sell our less-vital organs for a chance to sit along the glamorous runway.    
    Just because we aren’t there sitting next to Heidi Klum doesn’t mean we can’t use Fashion Week for a reason to get together with our closest girlfriends and have a dinner in honor of Fashion!

Fashion Weeks Annual Girls Night In

Time: Right Around the time of Fashion Week, Preferably on a Weekend Night when Work is not a conflict and your ladies can take time to dress up and go out.

Suggested Event Colors: Pink, Black, and White!

Summary: Invite your girls out for a night of Good Conversation, Great Clothing, and Fabulous Food. A Dinner Party is easy to put together and challenges your creativity. For this event, dinner will follow in a 3-course meal. The First course will be a yummy Green Salad with Fruit, the Second will be Apricot Chicken with Steamed Vegetables (Salmon can be substituted for any vegetarians in the group), and the Final course will consist of Chocolate Strawberry Cupcakes. Of Course Delicious Cocktails will be served through the dinner, a Pink Musketeer for your social drinkers and a Non-Alcoholic Fizz for those who prefer not to drink. The night will be filled with Great People, Fun Music, and Conversation.

Hint: Use this event to be charitable. “Have a Used Clothes Drive” for your local Goodwill or Homeless Shelter. Women love going to out when they know they are helping themselves and others.

Invitations: About a week before the dinner send out invitations to your hopeful guests. The invitation sets the stage for the event For this event I recommend a little creativity.

“Hanging Out” Invitations
Needed:
24-guage Metal Wire (Found at your Local Home Depot)
Wire Cutters
Needle Nose Pliers
Cardstock
Scrapbook Paper (That will look good behind the Invitation)
½ inch Width Colored Ribbon
1-Hole Punch

Using Wire Cutters, cut about 5-inces of Metal Wire for each guest invited. Next, use Needle Nose Pliers to form a mini wire hanger out of the Metal Wire. After you have completed the hanger print of invitations on White Cardstock, then mat the invitations on your Designer Scrapbook Paper. After all the cuts and corners have been completed punch a hole in the top left corner of the invitation. Feed 3 inches of Ribbon in the hole and wrap around the neck of the hanger. Finish of with a nice Bow and Done!

 Table Set-Up: For dinner you want to set up a room that will remind your guests of a night at a Fashion Show. A Long table strongly reflects a Runway and can help socialization with your guests exceed what it would on a round table. 
Pick a Table Cloth that best represents the themed colors of the party, in this case Black. (Plus spilled food doesn’t show)

Run a Pink Table Runner down the center and off the sides of the table. On top of the pink Runner place a White Smaller Table Runner (a mini runway) in the middle. Napkin Linens will be best as white, and if you feel like spending the extra money for Chair Covers I encourage you to get creative and have fun!

For Centerpieces you can do anything from Designer Shoes “walking down the runway” to a classic twist with Mirrors, Candles, and Pink Rose Petals (on sale right after Valentines Day).

During Fashion Week Seats are assigned to the guests and your guests will love finding their Name Cards on the “Runway Table”. Name cards can lay flat or can be folded to stand up, either way is up to your style and unique ideas. For example I am going to use flat cards that can be left on the table, this gives me the opportunity to place a small Chocolate Covered Strawberry at the top left corner of the card.

Fun Napkin Folds can be important to your table setting since dinner will be 3 courses, the table will not be set prior to the event. I like to stick it to a classic fold which can be found (along with many other ideas) at: http://zoomyummy.com/2010/06/01/cute-napkin-fold

Music Playlist: “Girls Night In” calls for playlist after playlist of Girly Dance songs. Some artists I would recommend would be Lady Gaga, Katy Perry, Britney Spears, etc. It is also very easy to get online and download Runway Music Remixes that have been used in past Fashion Shows.

Cocktails:
Pink Muskateer
Serves: 2

12 fluid ounces Vodka Kurant                          8 ounces Lychees
12 fluid ounces Lemonade                                1 cup Strawberries

Pour a whole tin of Lychees (including the syrup) and a punnet of Strawberries into a blender. Add ½ a bottle of Vodka while blending. Pour a glass (¾ full) over Ice and top with Lemonade. Garnish with a spray of Mint.

Non-Alcoholic Fizz
Serves: 2

3 fluid ounces Cranberry Juice                          3 fluid ounces Orange Juice
3 fluid ounces Club Soda

Using a Shaker, mix Orange and Cranberry Juice together with a couple of Ice Cubes. After, pour drink in a highball using a strainer to get out the used Ice. Add Ice to the new glass and top with Club Soda.
Note: Best to serve these two drinks in a Clear Glass with a Pink Stir Stick or Pink Straws.
Dinner:
Green Salad With Fruit
Serves: 6
Salad:
5 cups Mixed Lettuce Greens                  1 Ripe Pear     
1 Sweet Apple                                        ¼ cup Pomegranate Seeds
¼ cup Golden Raisins                              ¼ cup Sliced Almonds

Dressing:
¼ cup Light Olive Oil                               ¼ cup Pomegranate Juice
3 Tablespoons Lemon Juice                      2 Tablespoons Granulated Sugar
½ Teaspoons Salt                                     ¼ Teaspoon Black Pepper

Combine all ingredients for salad in a large salad bowl, tossing the salad frequently.

Combine all ingredients for the dressing into a blender and blend until dressing becomes a light pink color. 

Lightly coat the salad in dressing and serve.

Apricot Chicken
Serves: 6

6 Skinless Boneless Chicken Breasts                            
1 cup Apricot Preserves
1 ½ (1 ouz) Package of Dry Onion Soup Mix
1 (10 fl.oz) Bottle of Russian Style Salad Dressing

Preheat oven 350 degrees.

Place Chicken Pieces in a 4 quart casserole dish.
Mix the Soup Mix, Dressing, and Jam together and pour over Chicken.
Cover dish and bake for 1 hour in preheated oven.

Note: Salmon can be substituted for Vegetarians at the party.

This dish is best served with Steamed Carrots, Peas, Broccoli, and Asparagus.

Dessert:
Chocolate Strawberry Cupcakes
Makes: 24 cupcakes

Chocolate Cupcakes:
3 cups All-Purpose Flour                           2 cups White Sugar
½ cup Unsweetened Cocoa Powder          1 Teaspoon Salt
2 Teaspoons Baking Soda                         2/3 cup Vegetable Oil
2 cups Water                                             2 Tablespoons Vinegar
2 Teaspoons Vanilla Extract

Preheat Oven 350 degrees. Line 24 muffin cups with paper liners.

In a large bowl, mix together Flour, Sugar, Coca, Salt, and Baking Soda. Then, stir in Oil, Water, Vinegar, and Vanilla, until blended. Pour mix into muffin tins until liners are 2/3 full.

Bake for 22 minutes until Cupcake tops are slightly firm. Let cupcakes cool before frosting.

Strawberry Frosting:
¾ cups Fresh Strawberries without Stems          1 cup Unsalted Butter
2 (1 lb) Boxes of Powdered Sugar                     Couple Splashes of Milk

Mash Strawberries in strainer getting rid of as much juice as possible.

Puree Strawberry Mush in a food processor.

Cream the Butter, add Strawberry Puree and a couple cups of Powdered Sugar at a time, mixing all the ingredients together.

When Frosting is too thick to mix add a splash of Milk. Continue adding Powdered Sugar until it is at the consistency you like.

Note: To add extra sweet goodness to the cupcakes you can add a chocolate covered strawberry to the top.

Favors: To say, “Thank you” to your guests for attending it is best to give favors. Preferably something that signifies the evening that way they remember the fun time they had every time they see it.

Yogurt Face Mask
Makes: 1 Mask

1 Tablespoon Natural Plain Yogurt (Not Low fat or Nonfat)
1 Tablespoon Runny Honey

Combine Mix! Place in small plastic favor jars (you can find at any Dollar Store or Party Supply Store) then send home with your guests!

He Loves Me, He Loves Me Not...Who Cares!

               Valentines Day, Single Awareness Day, what ever you call it these days, is just around the weekend and hop skip and a jump to Monday. Even though this holiday bears a love-hate relationship with anyone who spots that big pink teddy bear in your local gas station it is a time of year when we can let go and eat as much chocolate as we can! Chocolate Cupcakes, Chocolate Cake, Chocolate Bars, Chocolate Kisses….it would be a sin to not celebrate the gift of the cocoa bean! To help celebrate I have found the best chocolate recipe that you can enjoy by yourself with a great chick flick or with that special someone and flickering candle.

Molton Chocolate Cake

Ingredients
Chocolate Cake Mix                         8 oz. Bittersweet Chocolate (Chopped)
½ cup Heavy Cream                         4 Tablespoons unsalted butter
1 Tablespoon Light Corn Syrup        Carmel Sauce
                               1 Pint Vanilla Ice Cream

Directions:
Preheat the Oven to 350 degrees.

Assemble cake batter according to box directions.

Brush four 1 ¼ cup brioche molds (or 10 oz ramekins or jumbo muffin tins) with 2 Tablespoons of melted butter. Dust the molds with cocoa powder and tab out the excess

Fill brioche molds with the cake batter until it is ¾ full.

Microwave the chocolate, cream, butter, and corn syrup in a microwave safe bowl in 30-second intervals, stirring each time, until chocolate starts to melt.

Use the tip of a paring knife to gently loosen  the cakes from the molds and then invert the cakes onto a cutting board.

Hollow out the cake with a spoon, save the scraps. Wrap the cakes with plastic wrap and microwave until steaming. (1 Minute)

Drizzle plates with caramel, then unwrap the cakes and place on top of drizzled caramel. Pour about 3 Tablespoons of filling in each cake.

Plug the hole with cake scrap. Save or discard any remaining scrap.

Top each cake with a scoop of ice cream, spoon more chocolate sauce on top, spreading it thin so it hardens into a shell.

Grab a spoon, a glass of milk, and sit back and enjoy.

Cheesecake Cupcakes

Ingredients:
2 Cups Crushed Gram crackers               4 Tablespoons Butter
2 (8 oz) packages of Cream Cheese         ¾ Cups White Sugar
2 Eggs                                                     1 Tablespoon Vanilla Extract
                           Cherry or Strawberry Pie Filling

Directions:
Preheat oven 350 degrees

Crush gram crackers and mix with butter. Place 1 Tablespoon of gram cracker mix in the bottom of each cupcake liner and press until they mold together.

Beat together cream cheese, sugar, eggs, and vanilla until light a fluffy.

Fill each cup cake liner with cream cheese and fill almost to the top.

Bake for 15 minutes. Remove from oven and cool.

Top it off with cherry or strawberry filling.


Whether you are spending Valentines Day alone or with your sweetheart, there is no reason to not enjoy it. I have a firm belief that even if there is one thing to look forward to it will always change your outlook and it always seems to make things better. Celebrate your love for your friends, your family, or even your love of cooking!

I am SUPERWOMAN!!!

“Being a wife and a mother is a lot like being Superwoman!”

When I first heard someone say this, I was freshly engaged, excited about getting married, and dreaming about the perfect “housewife” I was going to be. “Pshh, that will be easy!” I thought to myself, even as I looked around and every “wife and mother” was silently laughing and nodding. “It couldn’t be that hard!” I tried to convince myself. At the time there were two other girls with me all freshly engaged and in the same state I was, delusion. I don’t know what we expected, the pastor to hand us our cape and boots right after we handed him his check or that we would wake up the next morning with the ability to freeze time or clean in a flash. I guess we all figured that since we survived college and college roommates we were safe and we could handle anything that was thrown at us, I guess we now understand why they kept girls in one dorm and boys in the other!
Don’t get me wrong, I love being married! My husband is by far the best thing that has ever happened to me, and on most days can do dishes 10 times better than I can, but when it comes to entertaining guests or celebrating something special  he’s a teen girl in an auto shop.
Entertaining is a lot different married than when you were single. Instead of parties that consist of playing Wii, eating potato chips, guzzling Mountain Dew, and sending out a mass text 10 minutes before it starts you now have to plan and get creative.
